Ingredients:

Directions: Pour most of the water into a mixing bowl. Add most of the masa and salt and mix to form. (What you are looking for here is a mixture that hold together but isn't sticky. You can add more water or more masa to achieve this mixture. Divide the mixture into 8 equal size balls and put onto wax paper. Using your hands press the mixture into a disk of about 1/4 inches thick and 21/2 inches thick put it on the wax paper and add the cheese (about 1 heaping teaspoon. Fold over the disks to enclose the mixture, pressing down on the edges. Fry until golden on both sides. Serve, if desired, with salsa. Makes 4 |
