Pupusas
(Salvadoran Pies)

Ingredients:

2 cups hot water (more or less
1 t salt
4 cups ( more or less) masa harina (available in the Mexican section of most grocery stores or all Latin American stores)
1/2 Cup shredded cheese or refried beans
4 T vegetable oil or more or less. (You can use much less oil in a non stick frying pan)

 

Directions:

Pour most of the water into a mixing bowl. Add most of the masa and salt and mix to form. (What you are looking for here is a mixture that hold together but isn't sticky. You can add more water or more masa to achieve this mixture. Divide the mixture into 8 equal size balls and put onto wax paper. Using your hands press the mixture into a disk of about 1/4 inches thick and 21/2 inches thick put it on the wax paper and add the cheese (about 1 heaping teaspoon. Fold over the disks to enclose the mixture, pressing down on the edges. Fry until golden on both sides. Serve, if desired, with salsa. Makes 4
