Banana and Bean Dip

Ingredients:

2 Chorizo or Italian Sausage, skinned and chopped (optional)
1 Onion, finely chopped
2 Cloves garlic, pressed
2-3 Poblano chiles, seeded, deveined and finely chopped
1/2 cup Tomato Sauce
2 cups cooked kidney beans, slightly mashed (if using canned include some of the liquid)
4 ripe but firm bananas chopped

Tortilla chips for dipping

 

Directions:

Saute the sausage, if using. Add onion and continue to cook until soft. Reduce heat and add garlic, chiles, and tomato sauce. Cook for five minutes. Add the beans and bananas and enough of the bean liquid to make a thick dipping consistency. Mash the beans slightly with a potato masher and mix well. Cover and cook over low heat for five minutes. Serve warm. Yield: 4-5 cups.
